There’s a single-serving stovetop version of this dish that I sometimes make for lunch: Chop 1 leek into ¼-inch rounds. Boil for 1 minute and drain. Meanwhile, fry 2 strips of bacon in a small omelet pan. Remove the bacon, add the leeks to the bacon fat, and stir. Cook for 3 minutes, until the water from the leeks has evaporated. Meanwhile, lightly mix 2 or 3 eggs in a bowl. Put the bacon back in the pan, pour the eggs on top, reduce the heat to low, and cover tightly. Leave for 2 or 3 minutes, until the eggs are set. If they are not set by then, just cover the pan again, turn off the heat, and wait a bit.
